Hey Toni, I understand where you are coming from. I would suggest making a staging or local copy of your sites, updating to the latest version of WordPress and then installing the Classic Editor plugin. The earlier version might not have been fully functional. So far, I haven’t heard anyone say that they weren’t able to revert to the old editor via plugin.

Maybe they need to keep the classic version for website developers. I would even pay for it if reasonably priced and incorporate their cost into my quotes for client websites.

My clients want websites for their companies, services, contacts, etc. None are bloggers. A few have one blog page to add their company news, events, etc. I like the core functions of WordPress that make many things easier than in HTML. I’m still using the 4.9.10 version but have security concerns since this isn’t being updated. I tried one of the early releases of Gutenberg with the Classic Editor plugin, it didn’t work. How do I keep my clients’ sites updated for security purposes? Should I find another PHP website software for the core functions and tell all of my clients that I’ll need to make new websites for them because WordPress is no longer compatible with their existing site and no longer secure due to the unsupported version? I’ve thought about installing the newest version on my developer site and installing one client’s data there to see what happens. I don’t have hours and hours to screw around with this new version. I am not a happy camper.

In recent years I have marveled at how website-friendly WP has become and the growing number of excellent, customizable themes available. Gutenberg is a step backward to a mere blogging platform. Leave it as a plugin!
